Founding President of Zátiší Group

When I first came to Prague in the early 1990’s, I was enchanted. However, I quickly realized that the field of catering and culinary arts was still an uncharted territory. I decided to change that and opened my first place, V Zátiší wine bar. Since then, the business has grown and prospered, and the Czech Republic has become my home. My four children, Virat, Jacqueline, Shaan and Jasmine are the greatest source of happiness in my life.

It was crazy to quit a good job at the age of 50 and join Mr. Suri in his uncertain enterprise. The only thing I knew about him was that he comes from India and is 31. Also, as an economist I had no experience in gastronomy until that time, but it was a challenge and so I took it up. Today, after 27 years of cooperation and building up the company, I can say that they have been the most beautiful and fulfilling years of my life.

I have been working for the Zátiší Group since 1997. Before that I worked for different restaurants and also in catering. Thanks to that I gained experience, learned a lot of new things and met people that later became my close friends. What I like the best about my job are the changes at Mlýnec, which make us move forward constantly.

Gastronomy has been part of our family for generations. After completing my studies abroad, I worked in the tourism industry, but always felt the need to return to our profession. In eight years at Bellevue, I have worked in every position, which allowed me to get an understanding of the restaurant operations. Constant progress, looking for and creating new trends, a great team and the support of a large company are the main reasons why I cannot imagine my professional life without Bellevue.

V Zátiší restaurant manager

I think my colleagues think of me as a piece of old furniture that has been at the V Zátiší restaurant since its beginning. I started as an inexperienced waiter at the Parnas restaurant in 1993. As time passed, I managed to become a Chef de Rang (assistant headwaiter). In 1997 I was helped create a new team at the Bellevue restaurant and nowadays I can call the V Zátiší restaurant my home. I have been working here as a restaurant manager since 2001.

I have chosen Fresh & Tasty because of its philosophy. I like the fact that it considers eating a meal as an important part of the day and that our chefs carefully choose seasonal and local ingredients to present the variety of Czech and international cuisine. I came from the French company Newrest, which provides on-board refreshments, where I worked as a regional manager in Croatia. I want to bring all my experience of serving a large number of diners to F & T.

My way to Bellevue was through a number of great and inspiring stops. The last one was in Mlýnec - another restaurant of Zátiší Group. In the Czech Republic I was working in a few luxurious restaurants with some well-known master chefs before flying to New York. One of the restaurant was even awarded with the michelin star. In New York I worked as a Head Chef in one of their amazing restaurants. Then I wanted to show my cooking skills to guests here in Prague.

When I was asked during my job interview in 1998, “What are your positive traits?” my only answer was: “I love people and I am emphatic…” Back then, I was convinced that could not be enough. Time tells that these are the most important things for working in this field. Perhaps, thanks to the fact that Zátiší is full of people who feel the same, I still enjoy my work – even after all those years. In my free time, I usually go jogging or visit a gym, but it is a form of relaxation, not a sport.
